Ranch Fed Beef

Cross M Cattle is a family-owned operation, located in the Bowie, TX area. Cross M Beef is a division of Cross M Cattle, where our roots in the cattle business run at least five generations deep. Our Angus beef is grass-fed and grain-finished, not that “all grass-fed stuff” that is tougher than the sole of a boot! We believe in quality, tenderness, and taste. No growth hormones or preservatives are used in our beef.

We keep our beef in its natural state, No mRNA here!

Quarter Beef

* Come with our Supreme Cuts *

When you purchase a quarter of beef from us you are purchasing an equal share of one half. The processor requires that an entire half be cut the same, therefore you will not have the option of how it gets cut. It will be cut to our Supreme Cuts. Please see below for a list of our Supreme Cuts. When we drop your beef off at the processor, we give them your contact information. They will notify you when your beef is ready to be picked up.

Typical Supreme cuts from a quarter beef that yields 110 lbs. of meat are as follows:

  • 3-4 New York Strips Steaks 12-16 oz ea 2/package
  • 5-6 Rib-Eye Steaks 12-16 oz ea 2/package
  • 3-4 Fillet Mignon Steaks 6-8 oz ea 2/package
  • 1-2 Sirloin Steaks 20-24 oz ea 1/package
  • 1-2 Chuck-Eye Steaks 9-11 oz ea 1/package
  • 3-4 Denver Steaks 12-16 oz ea 1/package
  • 1 Flat Iron Steak 8-16 oz
  • 8-12 Tenderized Cutlets 5-6 oz ea 4/package
  • 2 Fajita meats 18-24 oz ea (can be: Flank, Skirt or Flap Steak)
  • 17-19 Short Ribs 10-11 oz ea 3/package
  • 1 Rump Roast 3-4 lbs
  • 1 Pikes or Arm Roast 3-4 lbs
  • 1/2 Brisket (sliced long ways) 3-4 lbs
  • 3-4 Stew Meat 1 lbs packages
  • 2 shank/soup bones
  • 38-44 Ground Beef 1 lbs packages

Rib-Eye, New York, Sirloin, Chuck-Eye, Denver & Flat Iron Steaks are 1-1/4″ thick. Fillet Mignon Steaks are cut to weight, not thickness.

All cuts other than ground beef are vacuum sealed. Ground beef is 85/15 and comes in plastic meat socks.
