Cuts from a whole beef using our Supreme cuts are as follows:

  • 12-16 KC (NY) Strips Steaks 2/package
  • 20-24 Bone-in Ribeye Steaks 2/package
  • 8-12 Filet (Tenderloin) Steaks 2/package
  • 4-8 Sirloin Steaks 1/package
  • 4-8 Chuck-Eye Steaks 2/package
  • 8-12 Denver Steaks 2/package (3/4″-1″ thick)
  • 4 Flat Iron Steak 2/package (3/4″-1″ thick)
  • 32-48 Tenderized Cutlets 4/package.
  • 8 Fajita meats (can be: Flank, Flap or Skirt Steak)
  • 24-28 Short Ribs 2/package
  • 4 Rump Roast 3-4 lbs
  • 4 Arm Roast 3-4 lbs
  • 2 Brisket
  • 12-16 Stew Meat 1 lbs packages
  • 8 shank/soup bones 2-3/package
  • 140-160 Ground Beef 1 lbs packages

Ribeye, KC (NY) Strip, Sirloin & Chuck-Eye Steaks are 1-1/4″ thick. Filet (Tenderloin) Steaks are cut to weight, not thickness.

All cuts other than ground beef are vacuum-sealed. Ground beef is an estimated 85/15 and comes in plastic meat socks.

Some options may affect the amount of meat you receive. When we drop your beef off at the processor, we give them your contact information. They will call you a week to ten days prior to your pick up or delivery date, to go over your custom cut options, or if you’d like to take advantage of our quantity guarantee, you can just tell the processor that you want our Beef’s Supreme Cuts.

If you choose to have custom cuts, they will walk you through the entire process, asking you simple questions (how thick do you want your steaks, how many steaks per package, what size of roast do you want, what fat content do you want in your ground beef?)

If you follow our Supreme Cuts, we guarantee you to get the cuts listed.

When we drop your beef off at the processor, we give them your contact information. They will call you a week to ten days prior to your delivery date to go over your custom-cut options. They will walk you through the entire process, asking you simple questions such as, how do you want your meat packaged, how thick do you want your steaks, what size of roast do you want, and what fat content do you want in your ground beef. Or, you can always just tell them that you want our Supreme Cuts.

Our whole-beefs average 480 lbs. of actual meat and require 14 cubic feet of freezer space.

If you follow our supreme standard cuts, we guarantee you to receive at least 440 lbs. of meat.
