Quarter Beef
When you purchase a quarter of beef from us you are purchasing an equal share of one half. The processor requires that an entire half be cut the same, therefore you will not have the option of how it gets cut. It will come with our Supreme Cuts. Please see below for a list of our Supreme Cuts.
Cuts from a quarter beef are as follows:
- 3-4 NY (KC) Strips Steaks 2/package
- 5-6 Bone-in Ribeye Steaks 2/package
- 2-3 Filet (Tenderloin) Steaks 2/package
- 1-2 Sirloin Steaks 1/package
- 1-2 Chuck-Eye Steaks 1-2/package
- 2-3 Under Blade (Denver Steaks) 2/package (3/4″-1″ thick)
- 1 Flat Iron -Steak (3/4″-1″ thick)
- 8-12 Tenderized Cutlets 4/package.
- 2 Fajita meats (can be: Flank, Flap or Skirt)
- 6-7 Short Ribs 2/package
- 1 Rump Roast 3-4 lbs
- 1 Arm Roast 3-4 lbs
- 1/2 Brisket (sliced long ways)
- 3-4 Stew Meat 1 lbs packages
- 2 shank/soup bones
- 35-40 Ground Beef 1 lbs packages
Ribeye, NY (KC) Strip, Sirloin, Chuck-Eye steaks are 1-1/4″ thick. Filet (Tenderloin) Steaks are cut to weight, not thickness.
All cuts other than ground beef are vacuum sealed. Ground beef is an estimated 85/15 and comes in plastic meat socks.

Quarter beefs require at least 3.5 cubic feet of freezer space.

When you purchase a quarter of beef from us you are purchasing an equal share of one-half. The processor requires that an entire half be cut the same, therefore you will not have the option to get custom cuts. Quarter beefs come with our Supreme Cuts.
Our quarter beefs average 120 lbs. of actual meat. We guarantee you to receive at least 110 lbs. of meat. Quarter beefs require 3.5 cubic feet of freezer space.
The actual weight of each cut may vary.

* Before you order, please read and accept our delivery policy:
- Our West route delivers on the 2nd weekend of the month.
- Please note the orange banner above containing the next available delivery dates.
- The delivery driver will contact you the Thursday before your delivery date with an approximate time of arrival.
- Any remaining balances must be paid for via cash or credit upon delivery.
- A responsible person 18 years of age or older, must be present at the time of meet up.
- The delivery driver will not leave meat boxes unattended.
